Easy chicken soup recipe

I sometimes shop at the butchers because I like supporting the local businesses and the quality of meat is so much better.

I bought a whole chicken and had it cut into 8 (breasts, thighs, legs, wings) – this is a lot cheaper than buying all the bits separately and makes your chicken go a lot further. You can cut a shop bought one up yourself at home too.

I took the carcass home too and threw it in a big pan for soup. There’s always some meat left on the bones so it’s the perfect economy meal – waste not want not 😉

Easy chicken soup recipe


  • Chicken carcass & back
  • 1 carrot – ends chopped off, broken in half
  • 1 onion – halfed, peeled, ends chopped off
  • 1 stick of celery
  • stalk of broccoli
  • 1 bay leaf
  • few stalks of parsley
  • knob of butter
  • tbs plain flour
  • salt & pepper

How to make chicken soup

      Put the chicken carcass in a big pot and cover with boiling water
      Put on the job over a medium heat
      Throw in all the veg and herbs and simmer for 35 minutes
      Remove carcass and use a knife to scrape off any meat – keep the meat and discard the carcass
      strain the soup into a new pot and discard the bay leaf and the parsley, return the rest to the original pan
      Put the veg back on the heat and add a large knob of butter
      Add the flour and mix in with a wooden spoon to form a coating, then slowly add in the liquid bit by bit, stirring thoroughly
      Add in half the chicken meat and blend with a hand mixer
      When soup it smooth add the rest of the chicken and season to taste
